They seem to think if they make breads the old fashioned way, that they will taste better.
They need to get into the 21st century and stop using outdated and marginally-effective baking methods.
My family and I have been patrons of Empress Bakery since the late 60's. The Cheesecake is amazing. I must admit I haven't been there in years having moved to BC, but my memories of the wiener schnitten with the thick pink icing on top are still vivid. The smells of the fresh baked bread and buns are things I still miss in today's "21st Century" bakeries.
I had an opportunity to visit the store some years ago on a visit and the smells upon walking in to the store were like coming home. If only there were a way to get a recipe for that cheese cake.. :)

I work in the Empress Bakery, and I have been impressed with both their products and their business methods. The ordinary breads are fresh each day and if there are leftovers from yest they are on sale the next day. There are a few traditional breads that don't change price but they are ones that keep well. And yes, people tell us all the time that we have the best bread and the best pretzels in Edmonton! I ate some "fresh" supermarket bread yest and it tasted soooo mouldy after getting used to our breads!
Empress Bakery is the best bakery I know outside of Europe. We travel three hours to buy our bread At the Empress bakery. We stock up our freezer with their bread because it is of such high quality, it tastes good even after it was frozen. To be honest, it is even still good when it is stale.
